Handling half-and-half and complex custom builds without kitchen chaos

Half margherita, half supreme, no olives on the supreme side only, swap to a gluten-free base, extra cheese over the whole thing. That’s one order, phoned in, during a rush, to whoever picked up the phone with a docket pad in one hand. Get any one of those five details wrong and it’s not a slow pizza — it’s a remade pizza, on a base that can’t be reused, during the one shift you had no spare time for it.

Why handwriting works until it doesn’t

A plain margherita survives being scribbled on a docket.
